 Trained in the U.S. Marine Corps, then at the Culinary Institute of America and as Emeril Lagasse's Executive Sous Chef at Commander's Palace in New Orleans, Chef Carl Walker went on to become Excecutive Chef at the acclaimed Brennan's of Houston. There he artfully proved that Creole and Texas styles are kitchen-compatible. In 2003, he resigned as Executive Chef of Brennan's and became the General Manager. He still resides in Houston. Says Emeril Lagasse: "One of America's Greatest Chefs. Wow!"
